Ingredients:

  • 1 large chayote
  • 2 tablespoons of corn flour
  • 2 eggs
  • 100 grams of fresh cheese
  • 1/2 teaspoon of garlic powder
  • Vegetable oil
  • Ground black pepper
  • Salt

Instructions:

Wash the chayote thoroughly and peel it. Grate it using a food processor or a grater and place in a colander to drain its juice.

After a while, squeeze out any remaining liquid from the chayote using paper towels. Transfer it to a bowl and add the eggs, corn flour (or substitute with breadcrumbs if preferred), grated fresh cheese, garlic powder, ground black pepper, and salt to taste.

Mix everything together thoroughly until well combined.

Heat a non-stick skillet over medium-high heat with a drizzle of vegetable oil. Once hot, place a large spoonful of the mixture into the skillet, flatten it slightly to form a tortilla shape. Cook until golden brown, then flip. Add more oil if needed.

Once cooked through and golden on both sides, remove the chayote tortillas and place them on paper towels to absorb any excess oil. Repeat until all the mixture is used up.

Serve a couple of chayote tortillas with a side of fresh salad, and enjoy!
