Ingredients

– Servings: 4
– 1 tablespoon of butter or oil
– ½ white onion, diced
– ½ kg of pumpkin
– 3 cups of water
– ½ cup of cream
– ½ cup of grated or crumbled cheese
– Salt and pepper to taste
– Fresh cilantro leaves

Step-by-Step Preparation

1. Put the butter in a pot and heat, add the onion. Cook for about five minutes until soft.
2. Peel the pumpkin or auyama, remove the seeds (these can be saved and toasted to serve with the soup), and cut the pumpkin into cubes.
3. Add the three cups of water to the onion and a pinch of salt, bring to a boil.
4. Add the pumpkin pieces and cook until soft and tender. Turn off the heat and let cool slightly.
5. Blend the contents of the pot until a purée is obtained.
6. Transfer the pumpkin purée back to the pot, add the cream. Add salt and pepper to taste. Mix well and cook over low heat for 10 minutes.
7. Add the cheese and mix well.
8. Serve with toasted pumpkin seeds, fresh cilantro leaves, and bread toasts.
